Public Notary

Dear Nigel,
As most of forum members I'm also living a nightmare after a purchase of Cyprus property.
I'm due to sign a new mortgage agreement with a bank that will reduce my monthly instalments by a half and also convert my currency to Euro from CHF.
The bank has requested that documents should be singed in a presence of public notary and given me details of Mr Petros Eftychiou working at Cyprus High Commission on London.
My question is - does it have to be done with him and him only or can I use a different public notary.
I don't remember anyone like that present when I originally signed my mortgage contract so wouldn't want to travel to London if it's not entirely mandatory.
Have you got any suggestions what should I look out for in the new contract ??
I have refused to sign anything without being able to receive a copy of the documents first so i can examine them myself. Has the bank got the right to refuse sending those to me ?
Many thanks in advance,
Evelyn
